Homemade Keto Chocolate Truffles
INGREDIENTS
Chocolate Truffle:
- 1 cup keto milk chocolate chips
- 1/4 cup heavy cream
- 2 oz. cream cheese, cubed and softened
- 1 tablespoon brewed coffee (optional)
- 1 teaspoon vanilla extract
- pinch of salt
Toppings (optional):
- shredded coconut
- unsweetened cocoa powder
- chopped almonds
- chopped pecans
- mini chocolate chips
DIRECTIONS
First, Add keto chocolate chips or chopped chocolate to a mixing ball and set aside.
Then In a small saucepan over low-medium heat, add in heavy cream and cream cheese. Stir until cream cheese has totally melted. Once the cream cheese has melted, add in brewed coffee, vanilla extract, and salt.
After removing the saucepan from the stove top and gradually pour heavy cream mixture into a mixing bowl with keto chocolate. Allow the heavy cream mixture to melt the chocolate. Gradually stir until all chocolate has melted.
Put the mixing bowl in the refrigerator for 1 hour to allow chocolate to cool and thicken.
Then Once cooled, scoop out about a tablespoon size dough ball and place it on a parchment paper-lined baking sheet. You can use a small ice cream scooper or you can roll the dough with your hands. Do this as rapidly as possible as you want to make sure the chocolate doesn’t start to melt. After all truffles have been formed, put them in the freezer for thirty -30- minutes.
